Sao Jorge (Topo) is based on a Gouda-type recipe that dates back to the 15th century.
This is a firm, smooth, textured cheese from the Azores Islands of Portugal. Considered a pasteurised version of Sao Jorge, the flavour profile is quite similar… clean, grassy notes, but with a slightly meaty, buttery finish and a very slight bite on the end. It’s often compared to aged cheddar or Gruyère but with a more pronounced tang and spiciness. Goes well with sliced pear.
